Cheddar Broccoli is one of our favorite veggie and cheese combinations! Here is a simple recipe that brings the two flavors together in a baked fritter that is a perfect side for any meal or as a snack on its own!

Cheddar Broccoli Baked Fritters

An easy baked fritter that is a perfect showcase for Face Rock creamery flavored cheddars. Here we use Peppercorn Harvest Cheddar. Try it with Vampire Slayer, Super Slayer, or Pepper Alpine!

Ingredients

1.5 cups cooked, chopped broccoli
1.5 cups shredded Peppercorn Harvest Cheddar
1 egg, lightly beaten to combine egg and yolk
¾ Cup Panko Bread Crumbs
½ tsp onion powder
1 tsp dried parsley
¼ tsp baking powder
1 tsp salt
Cooking spray

Directions

Heat oven to 350 F.
Line a baking sheet with parchment paper and spray with cooking spray.
Combine cooked chopped broccoli, cheese, egg, breadcrumbs, onion powder, parsley, salt, and baking powder. Mix until combined.
Refrigerate for 10-15 minutes to let the flavors settle.
Use a disher, ice cream scoop, or your hands to gather a half cup of the mixture. Compress into a patty and place onto the prepared baking sheet. This size makes six fritters. If you would like a greater amount of smaller fritters, use ¼ cup of the mixture.
Spray fritters with cooking spray and bake for a half hour or until golden.

Recipe Note

This is a great recipe to play with herbs and spice! Add your favorites to create different flavor combinations.
